Prior to Schork’s tenure at BYU, he was promoted to Assistant Athletic Director of Sport Performance in the fall of 2014 at Saint Louis University. He was hired in 2007 as the strength and conditioning coach for the Billiken men's and women's basketball teams. The Billiken men's team experienced significant success as SLU advanced to the NCAA Tournament in 2012, 2013 and 2014, which is a school record. In addition, the Billikens were nationally ranked all three seasons, including a Top 10 ranking in 2013-14. SLU won three A-10 titles (2012-13 regular-season and tournament, 2013-14 regular-season) as well.

Schork was named Master Strength and Conditioning Coach by the Collegiate Strength and Conditioning Coaches association (CSCCa) in May of 2013. This honor is the highest given in the strength and conditioning coaching profession. "This is an incredible honor for Erick," said CSCCa Executive Director, Dr. Chuck Stiggins. "Being named a Master Strength and Conditioning Coach signifies a commitment to the student-athlete, a commitment to the Saint Louis University Athletic Program, and a commitment to the strength and conditioning profession. We are honored to have Coach Schork as a member of our association and to have him join the ranks of the Master Strength and Conditioning Coaches. He is truly a model of an outstanding strength and conditioning professional."

Prior to his arrival at SLU, Schork spent four years as the Director of Strength and Conditioning at Wright State University. While at WSU, he helped design and implement training programs for 250 student-athletes, including the men's and women's basketball teams. Schork came to Wright State from The Ohio State University, where he served as an assistant strength coach from 1997 through 2003. Schork has experience at the professional level as well. He worked at the Buffalo Bills of the NFL and was the designer of the NHL's Columbus Blue Jackets inaugural weight room. He also served as the speed coach for the Wittenberg University Football team and a consultant for USA Youth Hockey.
